1 kilograms pork tenderloin, cubed in about 1 inch pieces
1 large onion, chopped
3-4 garlic cloves chopped
2 teaspoons ras-el-hanout, or to taste
500 grams oyster mushrooms roughly chopped
Water, as needed
1 (15-ounce) can diced tomatoes with juice
Salt and freshly ground pepper, to taste
Heat the oil in heavy frying pan, add pork, and cook, turning until browned all over.
Add onions, garlic, mushrooms season with Ras el Hanout spice and ¼ cup water, reduce heat to low. Cover and lower heat to medium low and allow to slowly cook until meat is cooked.Add water if needed. Adjust salt and pepper to taste.
