Quick Arabic Hummus

INGREDIENTS

    • 2 1/2 cups water
    • 3/4 cup chickpea flour
    • 2 -3 garlic cloves, minced
    • 1 teaspoon cumin, ground ( optional)
    • 1 teaspoon salt
    • 1 lemon, juice of
    • 1/4 cup tahini
    • 2 tablespoons olive oil

DIRECTIONS

  1. Pour 1/2 cup of water in a sauce pan.
  2. Add all the ingredients except the chickpea flour.
  3. Whisk in the chickpea flour to make a paste.
  4. Whisk in slowly the remaining water.
  5. Bring to a boil over medium heat, stirring occasionally.
  6. Continue stirring and simmer for 3 minutes.
  7. adjust lemon. salt and garlic to taste.
  8. Remove from heat, cover and cool.
  9. Note: quantities of lemon juice, salt and garlic can be adjusted to preference.
