Potato base cheddar cheese cake

INGREDIENTS:
For the potato base
4 Large potatoes, washed, peeled and grated
3 egg white
2 Tbls olive oil
salt and pepper
1 teaspoon garlic granules ( optional)

For the Cheese topping

250 g grated cheddar cheese
fresh spring onions finely chopped
fresh garlic finely chopped
1 whole egg
salt and pepper

DIRECTIONS:
Preheat oven on 240C,
For the potato base, mix all the ingredients together and place in a non stick cake pan . Bake until browned, about 20-30 minutes. You may also place the potato on a parchment paper and spread the potato evenly and bake until crispy.
Mix all the cheese ingredients together. Once the potato has cooked remove from oven and remove the cake and place on a parchment paper. In the middle of the cake add the cheese and put back in the oven until the cheese has melted and browned. 10-15 minutes. Remove from oven and let cool slightly.
