Octopus with leeks

  • 1 kilo frozen octopus
  • 4 large leeks chopped
  • 5-6 fresh green onions chopped
  • bunch dill chopped
  • 2 garlic cloves chopped
  • 2 fresh tomatoes chopped
  • salt and pepper to taste
  • 1/4  cup red wine vinegar
  • 3 tablespoons olive oil
  • 1 bay leaf

Directions

Boil octopus for 15-20 minutes once boiled chopped into pieces and set aside. Meanwhile heat olive oil and sautee leeks and onions for 3-4 minutes, then add the rest of ingriedients and cook for 10-15 minutes. When leeks have cooked add boiled octopus adjust salt and pepper to taste.
