Mixed Vegetable Patties

Preheat oven to 200C Fill a medium saucepan with water and bring to a boil. Season it with salt. Blanch the vegetables in boiling water for about four minutes. Drain and finely chop the cooked vegetables well. In a mixing bowl, add vegetables fresh onions, garlic, cheddar, egg, and breadcrumbs.. Mix well and chill in the refrigerator for 15-20 minutes.

Oil a nonstick baking sheet with olive oil. Shape the mixture into patty shapes and spread them evenly on the sheet.

Bake for 8-9 minutes.


  • 400 grams frozen mixed vegetables of your choice
  • 1/4 cup fresh onions, thinly sliced
  • 2 large garlic cloves, finely diced
  • 2/3 cup shredded cheddar cheese
  • 1 egg, beaten
  • 2/3 cup breadcrumbs
  • Salt & pepper
