Jambalaya is a vibrant and hearty one-pot dish that originates from Louisiana, USA, blending Creole and Cajun culinary traditions. It’s made with rice, vegetables (like onion, bell pepper, and celery), and a flavorful mix of meats or seafood—typically chicken, sausage, and shrimp.

Ingredients:
2 tbsp olive oil
1 onion, chopped
1 bell pepper (red or green), diced
2 celery stalks, diced
3 garlic cloves, minced
250g (1/2 lb) smoked sausage (Andouille or chorizo), sliced
250g (1/2 lb) boneless chicken breast or thighs, diced
2 Tbls Creole spice blend
1 can (400g/14 oz) diced tomatoes
1 cup long-grain rice
2 cups chicken broth
200g (7 oz) shrimp, peeled and deveined
2 spring onions, sliced (for garnish)
Fresh parsley (optional garnish)
Instructions:
- Sauté base: In a large pot or Dutch oven, heat oil over medium heat. Add onion, bell pepper, and celery. Cook until softened (about 5 minutes).
- Add meat: Stir in garlic, sausage, and chicken. Cook until chicken is no longer pink.
- Season: Add Creole spice blend. Mix well.
- Add rice & tomatoes: Stir in the rice and canned tomatoes (with juice). Mix to coat the rice in the spices.
- Simmer: Pour in chicken broth. Bring to a boil, reduce to low heat, cover, and simmer for about 25 minutes, until rice is tender.
- Add shrimp: Add shrimp and cook uncovered for another 5-7 minutes, until shrimp is pink and cooked through.
- Garnish: Top with green onions and parsley before serving.
