1 cup pitted Medjool dates, soaked in warm water for 30 min
2 tablespoons melted coconut oil
1/2 cup peanut butter
1/2 teaspoon pure vanilla extract
1/4 cup unsweetened raw cocoa powder
Grease a brownie pan with coconut oil or line it with parchment paper. Remove pits from the dates by slicing them. and soaked in warm water for about 40 minutes, so they are easier to process. Melt the coconut oil. Add dates and coconut oil in a food processor and pulse for a few seconds, then add remaining ingredients and pulse till well combined. At this point you can taste the mixture, if you want it a bit sweeter you can add some honey or maple syrup.
Carefully press the mixture in the pan and top with nuts, seeds, or chocolate chips whatever you desire.
Place in freezer for 1 hour or until firm. make sure you keep leftovers in the freezer to keep from going soft. Enjoy 🙂
