1-2 tablespoon Olive oil
1 large onion chopped
2 garlic cloves chopped
3-4 medium potaoes peeled and cut in 4
250 g frozen green peas
1 large Sausage of choice
¼ cup red wine
1 tablespoon tomato paste
salt and pepper to taste
water as needed.
Heat olive oil in a deep pot, add onions and garlic and cook about 5 minutes. Add sausage and cook another 5 minutes. Add potatoes, green peas and stir well. Cook another 2-3 minutes. Add tomato paste and red wine, cook 1-2 minutes, add salt and pepper and enough water to barely cover ingredients. Cover, lower heat to medium and cook until potatoes are cooked, About 20-30 minutes. Add hot water if needed. Once potatoes have cooked taste and adjust salt and pepper. Break eggs one by one and slowly add to pot on top of potatoes. Careful not to break. Add salt and pepper on eggs. Cover and lower heat to low and let eggs cook to liking. About 3-4 minutes.
Serve with feta cheese and fresh bread. Enjoy 🙂
