For the cake
- 10 eggs room temperature
- 10 tbls chopped walnuts/almonds
- 10 tbls breadcrumbs
- 8 tbls sugar
- 1/4 tsp vanilla powder
- 1 tbls cognac
- For the syrup
- 2 1/2 cups water
- 2 cups sugar
- 3 cinnamon sticks
- 3-4 whole cloves
Prepare the syrup first by adding all the ingredients to a pot and bring to boil. simmer for 5 minutes . Put aside and let cool.
Preheat oven at 170C
Separate yolks from whites. Beat yolks with sugar till light and fluffy. Beat whites till thickened. Add yolk to white and the remaining ingredients mix well. Place in buttered pan 30cm X 30cm . bake for about 45 minutes or till toothpick comes out clean. Remove cake , slice cake in large pieces and while still hot add syrup. Sprinkle some chopped walnuts and let cool. Serves 10-12
For a bigger cake just double ingredients.
