Greek Pork Ribs with Grape Molasses

Description:
Tender pork ribs marinated in rich grape molasses, garlic

, and herbs—roasted to caramelized perfection.

Ingredients:

1.5 – 2 kg pork ribs

1/3 cup grape molasses (petimezi)

2 tbsp olive oil

2 tbsp red wine vinegar

3 cloves garlic, minced

1 tbsp Dijon

1 tbsp dried oregano

1 tsp smoked paprika

Salt and freshly ground black pepper

Optional: fresh thyme or rosemary

Instructions:

  1. In a bowl, mix molasses, olive oil, vinegar, garlic, mustard, oregano, paprika, salt, and pepper.
  2. Coat the ribs in the marinade. Cover and refrigerate for at least 4 hours or overnight.
  3. Preheat oven to 160°C (320°F). Place ribs on a lined tray, cover with foil, and roast for 2.5–3 hours.
  4. Remove foil, raise oven to 200°C (390°F), and roast for 15–20 minutes to caramelize.
  5. Let rest for 10 minutes, slice, and serve with lemon wedges or roasted potatoes.
