Greek Meatballs in egg lemon sauce ( Giouvarlakia)

Meatball ingredients:

1 kg ground minced beef
2 medium onions finely chopped
3 garlic cloves minced
1 small bunch dill finely chopped
½ bunch fresh spearmint leaves
finely chopped
½ bunch fresh parsley
finely chopped
½ cup white rice
1 egg
1 tsp salt
½ cup water

2 tbls olive oil
1 ½ litres vegetable or beef broth

for the egg lemon sauce
3 eggs separated yolks from whites
2-3 lemons juiced

In a large pot bring olive oil and broth to boil. In a bowl mix all the meatball ingredients and knead till well combined. Knead medium size meatballs and add to boiling broth. Lower heat to medium low, cover and let boil for 30 minutes until rice is cooked. Adjust salt and pepper and Lower heat to low
Prepare egg lemon sauce:
beat egg whites till fluffy and white, add yolks one at a time and continue beating, add lemon juice. From hot pot take ¾ cup of broth and while constantly stiring add broth to egg lemon mixture . Slowly pour the egg lemon sauce in pot and let simmer 3-4 minutes. Serve with extra fresh ground pepper.
