For the donuts
500 gr. All purpose flour
1 sachet dry yeast
1 tbsp honey
1 tbsp coarse salt
2 ½ cups lukewarm water
For frying : sunflower oil
For serving :
Honey
Cinnamon
Sesame seeds
Put the flour, yeast, honey in a large bowl and slowly add water until it becomes a thick paste for the doughnuts. Finally add the salt. Cover the bowl and leave it near a warm place (radiator or next to the stove) for 30 minutes, until the mixture starts to rise to the walls of the bowl.
For frying
In a deep saucepan, heat olive oil.
Don’t forget, every time we cut the donuts, we dip the spoon in water so that they easily come off and fall into the olive oil.
We cut them by hand. We dip our left palm into the mixture and press upwards.
Cut the doughnut that comes out of the thumb with a spoon and drop it into the hot olive oil, or more simply, drop spoonfuls of the mixture into the oil.
Fry for a few minutes until golden brown and drain on absorbent paper.
Place them on a platter and drizzle with thyme honey, cinnamon and roasted sesame seeds.
