500gr giant white beans soaked in water overnight
2 x500gr canned tomatoes grated
1 large onion thinly sliced
3 garlic cloves finely chopped
¼ cup olive oil
1 small batch chopped parsley
2 medium carrots chopped
1 tsp sugar
Salt and pepper to taste.
Rince beans after soaking overnight. Place in a large pot and fill with drinking water, boil over medium heat until soft, about 40 minutes.
Once beans are cooked, drain reserving one cup of the water. Preheat oven at 180°C.
Place beans , reserved water and the rest of the ingredients in a oven proof baking pan. Combine all the ingredients to mix everything together. Place in oven and bake for about one hour, until sauce has thickened. Adjust salt and pepper and Enjoy !!
