Soak chickpeas overnight, the next day drain, wash with clean water and drain again. Place them on a towel to absorb any water. Then place chickpeas in a blender and blend 1-2 minutes on high. Place chickpeas in a bowl.
Add the rest of the ingredients except baking soda and blend till it forms a paste. add this to the chickpeas and kneadd with your hands. If it is to dry just add a bit of water. At this point you can taste the falafel to adjust the taste.
A few minutes prior to frying add the soda and knead a bit more and let rest till oil is heated well. Make patty shapes and fry till golden on both sides.
For the tahini sauce
Mix the Tahini sauce ingredients in the blender until they reach a homogeneous texture.
Sample to ensure a balance of flavors. A good Falafel Tahini sauce should taste a bit tangy with a hint of garlic
Serve as a side dip
- 500grmas chickpeas
- 1 medium onion
- 1 small bunch fresh onions
- 1 small bunch of fresh coriander or parsley
- 2tbls flour
- 1tsp baking powder
- 1 tsp baking soda
- 1-2 tbls falafel mix
For Tahini Sauce
- 6 tbls tahini paste
- 1 cup lemon juice
- 3 garlic cloves
- a pinch of salt
