Ingredients:
250g Dried soya beans
3 Tbls Olive oil
1 Onion chopped
3 Garlic cloves crushed
1 Tbls Yellow curry paste
Salt and Pepper
Directions:
Wash and soak soy beans overnight. The next day drain them and add them to a pressure cooker. Cook them for about 15-20 minutes or until they are soft. Heat oil in a pan and add crushed garlic, cook 2 minutes and add onion, Cook another 2-3 minutes. Add Curry paste and stir until desolved. Add soya beans and some water from the cooked beans. Salt and pepper. Simmer until curry reaches the right thickness. Sprinkle with some coriander leaves and serve with rice and yogurt. You can also add cayenne pepper for a hotter dish.
