400gr semisweet chocolate,broken
1 Cup heavy cream
1 cup chopped walnuts
4 cups almond flour
4 Tbls peanut butter
1 tsp vanilla extract
desicated unsweetened coconut for dipping
Place chocolate and heavy cream in a sauce pan and heat gently stirring until chocolate has melted.Remove from heat and whisk until cooled. Let stand 15 minutes. Place mixture in a stand blender, add peanut butter and almond flour, vanilla extract, and blend until a dough is formed. If doudh still sticks to hands add a bit more almond flour. Carefully mix in the walnuts. Roll into balls and dip each ball in coconut. Place in fridge and allow to firm up. Keep cool.
