4-5 chicken thighs skin off
Finocchio ( fennel bulb) sliced
3-4 garlic cloves chopped
2 Red bell peppers sliced
4-5 large button mushrooms chopped
1-2 teaspoons of Hungarian hot paprika
¼ cup olive oil
1 tablespoon veggie mix
1 cup cubed feta cheese
Preheat oven at 220 °C
Wash chicken and place in a large baking pan. Place sliced fennel bulb, garlic,Red peppers and mushrooms. Place salt, pepper, oregano hot paprika , olive oil and veggie mix and mix well. Spread over vegetables and chicken. Cover baked pan with aluminum foil and bake in preheated oven for about 40 minutes or until chicken is done. Remove aluminum foil and place feta cubes all around the top and bake another 5-6 minutes. Serve with rice.
