Black lentils Beluga salad

Ingredients 

100gr   black lentils belounga

1 avocado

1 red dry onion

1/2 cup.chopped walnuts

1/4 cup pinenuts

1 orange

3-4 fresh onions chopped

4-5 cups baby  spinach

1 bunch of rocket saladwashed and cleaned, cut pieces

Salt Pepper to taste

Vinaigrette

1/2 cup extra virgin olive oil

1/3 cup orange balsamic vinegar

Directions

Rinse the lentils and boil them in plenty of water for about 20-30 minutes. Be careful not to over boil . Strain them and allow them to cool.
Clean the orange, sliced, remove the pips, and cut into two or three pieces each. Keep it aside. Clean the avocado and cut into small cubes. Clean the onion and cut into thin half slices.
Mix the baby leaves of spinach, rocket, lentil, fresh onions, onion, orange and avocado in a salad bowl. Salt pepper and stir. Mix the olive oil with balsamic vinegar.
Pour the walnuts over the salad, pour in the vinaigrette and stir gently. Serve and enjoy.
