Beetroot Garlic Dip

Description:
A vibrant and creamy Mediterranean dip made with earthy beets and bold garlic—perfect as a mezze, spread, or side.

For the beetroot garlic sauce
4 large boiled beetroots
3 medium boiled potatoes
½ cup walnuts
6-8 cloves garlic, peeled
½ cup olive oil
2 tbsp vinegar or Beetroot vinegar
Sea salt
Freshly ground pepper

  1. In the blender, beat the walnuts with the garlic.
  2. Peel the beets and cut them into pieces like the potato and add them to the blender.
  3. Add the vinegar, salt, pepper and beat until the ingredients are homogenized.
  4. Slowly pour in the olive oil until the garlic sauce becomes a cream with a velvety texture
  5. Adjust salt and pepper to taste.
