Beetroot Falafel


1 can chickpeas drained and dried

2 precooked beetroot

2 Tbls parsley chopped

2 garlic cloves

3 Tbls flour ( or gluten free flour)

1 tsp baking powder

1 small onion chopped

3 fresh onion springs chopped

1 Tbls Falafel mix

For yogurt sauce:

1 cup Greek yogurt

2 Tbls finely chopped fresh dill

1 minced garlic

2 tsp olive oil

1 tsp fresh lemn juice

salt to taste


In a bowl of a food processor add parsley, chickpeas, garlic and onions. Blend till finely chopped. Add beetroot, flour, baking powder and falafel mix, and blend till a firm paste is formed. If there is too much moister add more flour. You want to able to from patties. In a pan over medium high heat , add avocado or grapeseed oil. Once heated add falafel patties and fry about about 3 minutes on each side. Remove from pan and place on some paper towel to remove any excess oil. Serve with Garlic, dill yogurt sauce

For yogurt sauce, mix all indredients together until well blended.
